new potatoes
1/2 pound
sliced string beans
4 medium
sliced carrots
1 cup
cooked white beans
1 cup
green peas
2 tablespoons
red wine vinegar
1 tablespoonolive
oil
1 tablespoon
capers
1 tablespoon
finely chopped parsley
2 hard-boiled
eggs, whites only
1/2 cup
low-fat mayonnaise
Cook the potatoes and cool. Steam the string
beans and slice evenly. Place the beans, carrots,
white beans and green peas in a large mixing
bowl and add the potatoes. Mix the vinegar and
olive oil in a small bowl and season to taste
with salt and pepper. Add the dressing to the
vegetables and combine lightly. Separate the
hard-boiled eggs and chop the whites. Add the
egg whites, capers and mayonnaise to the vegetable
mixture and arrange in a salad bowl. Sieve the
egg yolks and sprinkle on the top as a garnish.
Serve with extra parsley and lemon wedges.

Calcium and Zinc.
