LAMB KEBABS
1/2 pound
cubed lamb
1/2 cup
lemon juice
1/4 cup
white wine vinegar
1 clove
crushed garlic
1/2 teaspoon
salt
1/2 teaspoon
fresh ground black pepper
2 tomatoes
1 medium
onion
1 bell
pepper
6 mushrooms
Combine the lemon juice, white wine vinegar,
garlic, salt and black pepper. Place the cubes
of lamb in it and marinate for at least 2 hours
( or overnight). Place the lamb cubes on a skewer,
alternating with onion quarters, whole mushrooms,
green pepper slices and tomatoes. Broil for
6-8 minutes, turning several times. Serve over
rice, couscous or with pita bread. This dish
goes well with a lemon-yogurt or cucumber-yogurt
sauce.
Notes: Excellent source of Vitamin C, B12,
Folacin, Niacin and Zinc. Good source of Vitamin
A, B6, B1, B2 and Iron.
